The CREAMIEST vegan mac and cheese! I make mine a tad spicy too (I’m addicted to spicy) just for fun- with just a little jalapeño. It’s crazy that you can make “cheese” out of vegetables! I am NOT a fan of Daiya and haven’t tried very many other pre-made cheeses, so I stick to making my own to avoid that “chemical” flavor that I feel to get from many other vegan cheese out there. If you guys know of a good vegan cheese, TELL ME PLEASE!
Vegan Mac ‘n “Cheese”:
2 cups potatoes, diced
1 cup carrots, diced
1/2 white onion, chopped
1/2 jalapeño, chopped (optional!)
1/4 cup cashews soaked
1/2 vegetable broth from boiled vegetables
1/2 cup cashew milk (or other non dairy milk)
1 tbsp salt
1 tbsp black pepper
1/2 squeezed lemon
1/4 cup nutritional yeast
1 tbsp garlic powder
1/2 tsp of cayenne (opt.)
1. Boil potatoes, carrots and onions until soft.
2. Blend potatoes, carrots, onions and jalapeño (only use jalapeño if you want it spicy!) together along with all ingredients on high in a blender until the “cheese” is a nice creamy and thick consistency. May need to push down sides as you blend.
3. Add to your favorite whole wheat pasta and veggies (so good with broccoli and spinach!). Enjoy 😊 top with paprika!
